Bamboo shoot drying process
1. Raw material pretreatment
Selection and grading: Select fresh, pest-free bamboo shoots, grade them by size and thickness to ensure uniform drying.
Washing and peeling: After washing, remove the aging part of the root, peel off the shell, and keep the tender stem.
Slicing/cutting: Cut into slices (3-5mm thick) or strips (5-8cm long, 0.5-1cm wide) according to needs, and the thickness must be uniform.
Blanching and killing: Boil in boiling water for 3-5 minutes (or steam for 2 minutes) to destroy enzyme activity and prevent browning. After removing, cool in cold water and drain.
2. Drying parameter setting
Stage 1 (preheating and dehumidification): temperature 40-45℃, humidity 50%, time 1-2 hours, drain surface moisture.
Stage 2 (rapid dehydration): temperature 50-55℃, humidity 30%, time 4-6 hours, a large amount of water evaporates.
Stage 3 (high temperature drying): temperature 60-65℃, humidity 15%, time 3-4 hours, deep drying to 30% moisture content.
Stage 4 (cooling and shaping): temperature drops to 45-50℃, humidity 10%, time 1-2 hours, balance the moisture inside and outside.
3. Drying completion standard
The moisture content drops to 10-12%, feels crisp and hard, and has a crisp sound when broken.
